Tomato Soup

Ingredients

  • 790g Tomatoes (your choice)
  • 120ml Whipping cream
  • 240ml Vegetable stock
  • 15ml Honey
  • Salt and pepper
  • 5ml Worcestershire sauce
  • 1 Medium onion, finely chopped
  • 4 Garlic cloves, finely chopped
  • 5ml Balsamic vinegar
  • Directions

  • Finely chop garlic and onion and saute in a small frying pan, adding a splash of water to encourage sweating rather browning.
  • Place tomatoes and all other ingredients in a large pan. Bring slowly to simmer for 25 minutes.
  • Let cool slightly, and then with a immersion blender puree the whole mixture.
  • Serves warm to hot with a splash of cream.
  • Tips: Garnish with basil leaves.
