Tomato Pasta with Basil Oil

Ingredients

  • 6 x Cloves of garlic, crushed
  • 3 x Onions, finely diced
  • Olive oil for cooking
  • 8 - 10 x Flavorsome tomatoes
  • 2 x Large red chilies , finely chopped
  • 500g Dried pasta (your favorite pasta)
  • Shaved parmesan
  • Fresh ground black pepper
  • Basil leaves for garnish
  • Directions

  • Sweat the onions and garlic in the olive oil in a frying pan on a medium heat until soft and starting to brown.
  • Add coarsely chopped tomatoes and warm through, if using chillies add them as well.
  • Cook the pasta in salted boiling water. When ready, drain the pasta and separate into bowls.
  • Top with the tomato sauce, some shaved parmesan and sprinkle chopped basil leaves over the top. Alternatively add about one table spoon of basil olive oil drizzled over the pasta,
  • To serve, spoon into bowls.
