Tomato Pasta with Basil Oil

Ingredients
6 x Cloves of garlic, crushed 3 x Onions, finely diced Olive oil for cooking 8 - 10 x Flavorsome tomatoes 2 x Large red chilies , finely chopped 500g Dried pasta (your favorite pasta) Shaved parmesan Fresh ground black pepper Basil leaves for garnish Directions
Sweat the onions and garlic in the olive oil in a frying pan on a medium heat until soft and starting to brown. Add coarsely chopped tomatoes and warm through, if using chillies add them as well. Cook the pasta in salted boiling water. When ready, drain the pasta and separate into bowls. Top with the tomato sauce, some shaved parmesan and sprinkle chopped basil leaves over the top. Alternatively add about one table spoon of basil olive oil drizzled over the pasta, To serve, spoon into bowls. Tips: The basil olive oil can be used for pasta, soups and bruschetta.
