The Basic Omelette

Ingredients
3 Eggs Knob of butter Salt and pepper Chives Directions
Break 3 eggs into a bowl and whisk while adding a pinch of salt and white pepper. Heat a 25cm (10inch) nonstick pan over medium heat and add knob of butter. When the butter has melted and begins to sizzle, pour in the egg mixture. Using a spatula, fold the edges of the egg into the center as it cooks. When the eggs are nearly cooked flip one side over the other and remove the pan from the heat. Gently slide the cooked omelette onto a plate and serve. Garnish with a salad of your choice and sprinkle with chives Tips: If you wish you could make filled omelette's by adding some grated cheese and maybe chopped tomato.
