Thai Green Chicken Curry

Ingredients

  • 2 x tbsp Thai green curry paste
  • 1 x Onion, sliced
  • 400g Chicken fillet, sliced
  • 375ml Can coconut milk
  • ½ Cup water
  • 1 x tbsp Fish sauce
  • 1 x Cup sliced beans
  • 1 x Zucchini, chopped
  • ¼ Cup peas
  • Directions

  • Heat thai green curry paste in a pan on medium heat. Add onions cook for 1 minute, add chicken cook for further 2 minutes.
  • Add the coconut milk, water and fish sauce.
  • Add vegetables, bring to the boil, and simmer for 3 minutes.
  • If desired, garnish with coriander and serve with rice.
  • Tips: Make sure you don't over cook the vegetables they need to be slightly al denta. This means for them to still have a little crunch.
