2 x 200g Blue eyed-cod fillets (any other firm white fish)
Vegetable oil
150g Snow peas, trimmed
¾ Cup coriander leaves
¾ Cup basil leaves, halved
1 Long red chilli, seeded and chopped
Dressing
1 tbsp Lime juice
1 bsp Fish sauce
2 tsp Brown sugar
Directions
Heat a large non-stick frying pan over medium heat.
Brush the fish with the oil and cook for 2 - 3 minutes each side or until cooked through. Set aside.
Blanch or steam the snow peas for 1 minute. Set aside to cool, and halve diagonally. To make the dressing, whisk together in a bowl the lime juice, fish sauce and sugar until sugar has dissolved.
Place the snow peas, coriander, basil and chilly in a bowl. Break the fish into large pieces and toss in with the salad and dressing.
