Tai Fish Salad

Ingredients

  • 2 x 200g Blue eyed-cod fillets (any other firm white fish)
  • Vegetable oil
  • 150g Snow peas, trimmed
  • ¾ Cup coriander leaves
  • ¾ Cup basil leaves, halved
  • 1 Long red chilli, seeded and chopped
  • Dressing

  • 1 tbsp Lime juice
  • 1 bsp Fish sauce
  • 2 tsp Brown sugar
  • Directions

  • Heat a large non-stick frying pan over medium heat.
  • Brush the fish with the oil and cook for 2 - 3 minutes each side or until cooked through. Set aside.
  • Blanch or steam the snow peas for 1 minute. Set aside to cool, and halve diagonally. To make the dressing, whisk together in a bowl the lime juice, fish sauce and sugar until sugar has dissolved.
  • Place the snow peas, coriander, basil and chilly in a bowl. Break the fish into large pieces and toss in with the salad and dressing.
  • Serve warm or at room temperature.
