Stir Fried Beef with Vegetables

Ingredients

  • 2 x tbsp Soy sauce
  • 2 x Garlic cloves, crushed
  • 2 x tsp Sambal oelek
  • 600g Rump steak, trimmed, cut into thin strips
  • 2 x tbsp Peanut or vegetable oil
  • 1 x Brown onion, sliced
  • 1 x Bunch of asparagus, trimmed, cut into 1/3
  • 1 x Bunch of broccolini, trimmed, cut into 1/3
  • 1 x 150g Snow peas
  • 1 x Serve of jasmine rice
  • Directions

  • Combine soy sauce, garlic and sambal oelek in a ceramic bowl. Add beef and stir to coat in marinade.
  • Heat a wok over high heat, add 2 tsp olive oil and swirl to coat.
  • Add onion to wok. Stir-fry for 1 minute. Add asparagus, broccolini and snow peas cook for 3 minutes or until tender (al dente) remove to a bowl and cover.
  • Wipe wok clean and heat over high heat, add 2 tsp oil and stir-fry beef for 2 mins.
  • Add all ingredients to wok for 1 minute and serve with rice.
