Sticky Pork with Bok Choy, Apple Sauce

Ingredients

  • 4 x Large cooking apples
  • 6 x Heads of bok choy
  • Salt and pepper
  • 1 x tbsp Vegetable oil
  • 2 x 200g Pork fillet
  • 2 tbsp Oyster sauce
  • ¼ Cup honey
  • ¼ Cup water
  • 4 x White onions sliced
  • Small bunch coriander
  • Apple juice
  • Brown sugar
  • 100g Ginger chopped
  • Directions

  • Peel and slice the apples and place in a small pan on medium heat. Add the sugar and apple juice and cook until soft. Place in fridge for later.
  • Heat oil in a large non-stick frying pan over medium heat. Place pork in the pan and cook for 2-3 mins each side.
  • Add oyster sauce, honey, water and ginger in a bowl and mix until combined. Pour over the pork ensuring all the fillet is coated.
  • Bring a pot of water to the boil, add the bok choy and onions and cover with a lid.
  • Reduce heat and simmer for 7 mins or until tender.
  • Top pork and bok choy with chopped coriander to taste, and serve.
