Sticky Pork with Bok Choy, Apple Sauce

Ingredients
4 x Large cooking apples 6 x Heads of bok choy Salt and pepper 1 x tbsp Vegetable oil 2 x 200g Pork fillet 2 tbsp Oyster sauce ¼ Cup honey ¼ Cup water 4 x White onions sliced Small bunch coriander Apple juice Brown sugar 100g Ginger chopped Directions
Peel and slice the apples and place in a small pan on medium heat. Add the sugar and apple juice and cook until soft. Place in fridge for later. Heat oil in a large non-stick frying pan over medium heat. Place pork in the pan and cook for 2-3 mins each side. Add oyster sauce, honey, water and ginger in a bowl and mix until combined. Pour over the pork ensuring all the fillet is coated. Bring a pot of water to the boil, add the bok choy and onions and cover with a lid. Reduce heat and simmer for 7 mins or until tender. Top pork and bok choy with chopped coriander to taste, and serve.
