Soy and Sesame Salmon Fillets

Ingredients

  • 1 x tbsp Olive oil
  • 4 x 140g Salmon fillets
  • ½ Cup soy sauce
  • ¼ Cup water
  • 3 x tbsp Brown sugar
  • 2 x tbsp Sesame seeds
  • 70g Mixed salad
  • Directions

  • Heat a large non-stick fry pan over medium heat.
  • Add the oil and salmon, skin side down, and cook for 3-4 minutes each side.
  • Combine the soy sauce, water, sugar and sesame seeds in a small bowl.
  • Add the soy mixture to the pan and simmer for a further 2 minutes or until the salmon is cooked through and the sauce has thickened.
  • Stir in chickpeas and season with pepper, then cover and stand for 5 minutes.
  • To serve, spoon the sauce over the salmon and serve with the salad greens.
