Snapper with Citrus Dressing

Ingredients

  • 2 x Oranges
  • 2 x Limes
  • 1 x Lemon
  • ½ tbsp Chopped peppercorns
  • 4 x tbsp Light olive oil
  • 2 x tbsp Oil
  • 2 x tbsp Oil
  • 1 x tbsp Sea salt flakes
  • Directions

  • To make the dressing, zest oranges, limes and lemon and put the zest into a bowl.
  • Juice the lemon and put the zest into a bowl. Segment the oranges and limes and add to the lemon juice, then add the pepper corns and light olive oil and stir well.
  • In a large frying pan over medium heat add the oil.
  • Pat dry the snapper with a paper towel. Season the fillets liberally with sea salt flakes and place the fillets skin side down in the hot pan.
  • Sear the fillets for 1-2 minutes over a moderate heat until crisp and golden. Then turn over. Remove from cook top and place snapper in oven in pan and bake for 8 minutes.
  • Arrange segments on the plates & serve fish immediately when cooked.
