Salmon and Baby Beans and Lime and Pepper Butter

Ingredients

  • 140g Baby green beans (not trimmed)
  • 2 x 200g Salmon fillets, skin removed
  • 3 x tbsp Lime juice
  • 40g Butter
  • 1 x Clove garlic, crushed
  • 2 x Shallots (using the ends only), chopped
  • ½ tsp Cracked black pepper
  • Sea salt
  • Directions

  • Bring a large saucepan of water to the boil.
  • Line a bamboo steamer with baking paper and add the beans, then place the fish on top and sprinkle with 1 tbsp lime juice.
  • Place the steamer over the boiling water and cook covered for 10 minutes. Add a pinch of pepper and salt.
  • Cook the chopped shallots for 5 mins in garlic and butter.
  • To serve, place on a plate the beans and fish and spoon over shallot butter sauce.
