Roast Pork with Baby Jacket Potatoes Recipe

Ingredients

  • 2 x 300g pork chop
  • Rosemary, chopped
  • 2 x tbsp Creme fraiche
  • Butter
  • Salt and pepper
  • 4 x Large new potatoes
  • Cress
  • Garlic, crushed
  • Sprig thyme
  • 1 x tbsp English mustard, for potatoes
  • Olive oil
  • Directions

  • Preheat oven to 190°C.
  • In a roasting tray add the potatoes, season with salt and pepper, scatter with thyme & roast for 40m mins or until tender
  • To make the mustard add the garlic and creme fraiche in a bowl and mix.
  • In a pan on medium heat, use 1 tbsp olive oil and cook the pork for 3 - 4 mins each side, not forgetting to season well with salt and pepper.
  • To serve, present the pork on 2 plates with the mini jackets. Garnish with cress and the mustard creme fraiche.
