Roast Pork with Baby Jacket Potatoes

Ingredients
2 x 300g pork chop Rosemary, chopped 2 x tbsp Creme fraiche Butter Salt and pepper 4 x Large new potatoes Cress Garlic, crushed Sprig thyme 1 x tbsp English mustard, for potatoes Olive oil Directions
Preheat oven to 190°C. In a roasting tray add the potatoes, season with salt and pepper, scatter with thyme & roast for 40m mins or until tender To make the mustard add the garlic and creme fraiche in a bowl and mix. In a pan on medium heat, use 1 tbsp olive oil and cook the pork for 3 - 4 mins each side, not forgetting to season well with salt and pepper. To serve, present the pork on 2 plates with the mini jackets. Garnish with cress and the mustard creme fraiche.
