Preserved Lemon and Salmon Pasta

Ingredients

  • 400g Angel hair pasta
  • 1 x tsp of Chopped store bought preserved lemon rind (flesh removed)
  • ¼ Cup of olive oil
  • ¼ Cup of white wine vinegar
  • 200g of Salmon filet, chopped
  • 1 x tsp of Salmon row
  • ¼ Cup of chervil leaves
  • Directions

  • Cook the pasta in a large saucepan of salted boiling water for 8 - 10 mins until al-dente. Drain and return to the saucepan.
  • Place the lemon, oil and vinegar in a small bowl and whisk to combine. Poor the lemon mixture over the pasta and toss to coat.
  • To serve, divide the pasta between 4 bowls and top with the salmon, row and chervil.
  • Add the stock, oregano, salt and pepper and cook for 2-3 mins until slightly thickened.
  • Add to the pasta, toss gently to combine and top with parmesan cheese.
  • Tips: Just before you serve squeeze a little lemon juice over the chopped salmon.
