Preserved Lemon and Salmon Pasta

Ingredients
400g Angel hair pasta 1 x tsp of Chopped store bought preserved lemon rind (flesh removed) ¼ Cup of olive oil ¼ Cup of white wine vinegar 200g of Salmon filet, chopped 1 x tsp of Salmon row ¼ Cup of chervil leaves Directions
Cook the pasta in a large saucepan of salted boiling water for 8 - 10 mins until al-dente. Drain and return to the saucepan. Place the lemon, oil and vinegar in a small bowl and whisk to combine. Poor the lemon mixture over the pasta and toss to coat. To serve, divide the pasta between 4 bowls and top with the salmon, row and chervil. Add the stock, oregano, salt and pepper and cook for 2-3 mins until slightly thickened. Add to the pasta, toss gently to combine and top with parmesan cheese. Tips: Just before you serve squeeze a little lemon juice over the chopped salmon.
