Pear, Celery and Walnut Salad

Ingredients
1 Egg yolk 50ml Apple cider vinegar Salt and freshly ground black pepper 1 tsp Dijon mustard 125ml Olive oil 2 - 3 Pears, firm 4 Sticks of celery 1 Cucumber 60g Walnuts, roasted and chopped Directions
In a large bowl, whisk together the egg yolk, vinegar, salt and pepper and mustard and slowly drizzle in the olive oil. Whisk the whole time. Add seasoning to taste, and if too thick let down with a tsp of water. Quarter and core the pears, then slice and place into a mixing bowl. Slice the celery and cucumber and add to the bowl along with the walnuts. Pour over the dressing. Toss and serve.
