Pear, Celery and Walnut Salad

Ingredients

  • 1 Egg yolk
  • 50ml Apple cider vinegar
  • Salt and freshly ground black pepper
  • 1 tsp Dijon mustard
  • 125ml Olive oil
  • 2 - 3 Pears, firm
  • 4 Sticks of celery
  • 1 Cucumber
  • 60g Walnuts, roasted and chopped
  • Directions

  • In a large bowl, whisk together the egg yolk, vinegar, salt and pepper and mustard and slowly drizzle in the olive oil. Whisk the whole time.
  • Add seasoning to taste, and if too thick let down with a tsp of water.
  • Quarter and core the pears, then slice and place into a mixing bowl.
  • Slice the celery and cucumber and add to the bowl along with the walnuts.
  • Pour over the dressing.
  • Toss and serve.
