Pan Fried Cherry Tomato and Bacon Penne

Ingredients
400g (14oz) Penne 1 tbsp Olive oil 200g (7oz) Bacon, trimmed and chopped 1 x Clove of garlic, crushed 2 x 250g Cherry tomatoes, halved ½ Cup chicken stock ¼ Cup oregano leaves Sea salt and crack black pepper Shaved parmesan cheese Directions
Cook pasta in a large sauce pan with salt for 10-12 mins until al-dente. Drain and keep warm. Heat a large non stick pan over high heat and add the oil. Allow the bacon to cook for 2 mins until it is golden. Stir in the garlic and tomatoes into the pan and cook for 2-3 mins or until just starting to soften. Add the stock, oregano, salt and pepper and cook for 2-3 mins until slightly thickened. Add to the pasta, toss gently to combine and top with parmesan cheese. Tips: When cooking the pasta add a little olive oil to the water to stop the pasta from sticking and help cook evenly.
