Pan Fried Cherry Tomato and Bacon Penne

Ingredients

  • 400g (14oz) Penne
  • 1 tbsp Olive oil
  • 200g (7oz) Bacon, trimmed and chopped
  • 1 x Clove of garlic, crushed
  • 2 x 250g Cherry tomatoes, halved
  • ½ Cup chicken stock
  • ¼ Cup oregano leaves
  • Sea salt and crack black pepper
  • Shaved parmesan cheese
  • Directions

  • Cook pasta in a large sauce pan with salt for 10-12 mins until al-dente. Drain and keep warm.
  • Heat a large non stick pan over high heat and add the oil. Allow the bacon to cook for 2 mins until it is golden.
  • Stir in the garlic and tomatoes into the pan and cook for 2-3 mins or until just starting to soften.
  • Add the stock, oregano, salt and pepper and cook for 2-3 mins until slightly thickened.
  • Add to the pasta, toss gently to combine and top with parmesan cheese.
  • Tips: When cooking the pasta add a little olive oil to the water to stop the pasta from sticking and help cook evenly.
