Lemon & Coconut Tart

Ingredients

  • 125g (4½ oz) Unsalted butter,
  • Softened 350g (½ cup) caster sugar
  • 4 Large eggs
  • 150g Plain yoghurt
  • 1 tsp Natural vanilla extracts
  • 3 tbsp Lemon juice
  • 2 tbsp Lemon zest
  • 90g Desiccated coconut
  • 2cm Pre baked short crust tart case
  • Icing sugar (garnish)
  • Double cream / vanilla ice cream to serve
  • Directions

  • Pre heat the oven to 180°C.
  • Beat the butter and sugar together in a bowl until light and creamy. Add the eggs, 1 at a time, beating them into the mixture.
  • Add the yoghurt, vanilla, lemon juice and zest. Stir in the coconut and stir in the mixture into the pre baked tart case.
  • Bake for 30 mins, or until the filling is golden and puffed.
  • Dust with icing sugar and serve with cream or ice cream.
