Lemon and Coconut Tart

Ingredients
125g (4½ oz) Unsalted butter, Softened 350g (½ cup) caster sugar 4 Large eggs 150g Plain yoghurt 1 tsp Natural vanilla extracts 3 tbsp Lemon juice 2 tbsp Lemon zest 90g Desiccated coconut 2cm Pre baked short crust tart case Icing sugar (garnish) Double cream / vanilla ice cream to serve Directions
Pre heat the oven to 180°C. Beat the butter and sugar together in a bowl until light and creamy. Add the eggs, 1 at a time, beating them into the mixture. Add the yoghurt, vanilla, lemon juice and zest. Stir in the coconut and stir in the mixture into the pre baked tart case. Bake for 30 mins, or until the filling is golden and puffed. Dust with icing sugar and serve with cream or ice cream.
