Easy Moroccan Chicken

Ingredients

  • 2 tbsp Olive oil
  • 2 x Onions
  • 2 tbsp Moroccan seasoning mix
  • 8 x Chicken thigh fillets, bone in skinless
  • 1 ½ Cups (375ml) chicken stock
  • Grated rind and juice 1 lemon
  • 4 x Potatoes, peeled, cut into small cubes
  • Directions

  • Heat half of the oil in casserole dish or frying pan with the lid on at medium heat.
  • Cook the onion uncovered for 3 minutes, stirring until soft and starting to brown.
  • Stir though Moroccan seasoning and cook for one minute. Remove from the pan and set aside.
  • Heat the remaining oil in the same pan, and cook chicken for 3 minutes on each side until golden brown.
  • Return onions to pan and pour over stock, lemon rind and juice. Season to taste.
  • Bring to the boil and then reduce to low heat.
  • Scatter potatoes around the chicken, cover and simmer for 12 minutes.
  • Simmer until potatoes are just tender, and chicken is cooked through.
  • To server, present the chicken and vegetables on a plate, and pour over the pan juices.
