Easy Moroccan Chicken

Ingredients
2 tbsp Olive oil 2 x Onions 2 tbsp Moroccan seasoning mix 8 x Chicken thigh fillets, bone in skinless 1 ½ Cups (375ml) chicken stock Grated rind and juice 1 lemon 4 x Potatoes, peeled, cut into small cubes Directions
Heat half of the oil in casserole dish or frying pan with the lid on at medium heat. Cook the onion uncovered for 3 minutes, stirring until soft and starting to brown. Stir though Moroccan seasoning and cook for one minute. Remove from the pan and set aside. Heat the remaining oil in the same pan, and cook chicken for 3 minutes on each side until golden brown. Return onions to pan and pour over stock, lemon rind and juice. Season to taste. Bring to the boil and then reduce to low heat. Scatter potatoes around the chicken, cover and simmer for 12 minutes. Simmer until potatoes are just tender, and chicken is cooked through. To server, present the chicken and vegetables on a plate, and pour over the pan juices.
