Ingredients

  • Cream of Mushroom Soup
  • 1 Brown onion, finely chopped
  • 500g (1lb) Button mushrooms
  • 3 Cups (24floz) single pouring cream
  • Sea salt and crank pepper
  • Shaved parmesan cheese
  • Cracked pepper to serve
  • Directions

  • Heat a large sauce pan over medium heat.
  • Add the butter, mushrooms and onions and cook for 3-4 mins until the onion is soft.
  • Add the milk and bring to the boil. Reduce the heat to simmer for 3-4 mins.
  • Add the cream, salt and pepper and use a hand held blender until the soup is smooth.
  • Ladle the soup into bowls and top with parmesan and cracked pepper .
