Cream of Mushroom Soup

Ingredients
Cream of Mushroom Soup 1 Brown onion, finely chopped 500g (1lb) Button mushrooms 3 Cups (24floz) single pouring cream Sea salt and crank pepper Shaved parmesan cheese Cracked pepper to serve Directions
Heat a large sauce pan over medium heat. Add the butter, mushrooms and onions and cook for 3-4 mins until the onion is soft. Add the milk and bring to the boil. Reduce the heat to simmer for 3-4 mins. Add the cream, salt and pepper and use a hand held blender until the soup is smooth. Ladle the soup into bowls and top with parmesan and cracked pepper .
