Chicken with Bacon Wrapped Asparagus

Ingredients

  • 2 x Chicken breast
  • 4 x Strips of bacon
  • 8 x Asparagus
  • 1 x Lemon
  • 100g Almonds
  • 1 Bag Spinach
  • Olive oil
  • Salt and Pepper
  • Butter
  • Directions

  • Heat a large non stick pan over high heat. Brush the chicken with olive oil and season with salt and pepper.
  • Divide the asparagus into four bunches and wrap with bacon. Brush lightly with olive oil.
  • Place the chicken in the pre-heated pan and cook for 3-4 mins each side.
  • Add asparagus to the pan and keep turning for 2 mins. Place lid on and cook for a further 2 mins. Cut lemon in half and place face down in the pan until golden brown.
  • In a separate pan cook the spinach and almonds with a knob of butter until soft and wilted, add seasoning.
  • Place the spinach on two plates with the asparagus. Slice chicken into two halves and place on top. Spoon over pan juices, and serve.
  • Tips: This is a very quick and easy dish; make sure that you don't over cook the chicken, ensuring it stays nice and moist in the center (white meat not pink) and sprinkle a little brown sugar over the lemon to make it more golden brown.
