Chicken with Bacon Wrapped Asparagus, Glazed Lemon, Wilted Almond Spinach

Ingredients
2 x Chicken breast 4 x Strips of bacon 8 x Asparagus 1 x Lemon 100g Almonds 1 Bag Spinach Olive oil Salt and Pepper Butter Directions
Heat a large non stick pan over high heat. Brush the chicken with olive oil and season with salt and pepper. Divide the asparagus into four bunches and wrap with bacon. Brush lightly with olive oil. Place the chicken in the pre-heated pan and cook for 3-4 mins each side. Add asparagus to the pan and keep turning for 2 mins. Place lid on and cook for a further 2 mins. Cut lemon in half and place face down in the pan until golden brown. In a separate pan cook the spinach and almonds with a knob of butter until soft and wilted, add seasoning. Place the spinach on two plates with the asparagus. Slice chicken into two halves and place on top. Spoon over pan juices, and serve. Tips: This is a very quick and easy dish; make sure that you don't over cook the chicken, ensuring it stays nice and moist in the center (white meat not pink) and sprinkle a little brown sugar over the lemon to make it more golden brown.
