Chicken & Mint Salad with Yogurt Dressing

Ingredients
2 x Chicken breasts Mint leaves Plain yogurt Salt and pepper Butter Lemon Fresh salad leaves Olive oil Directions
Pick salad leaves into a bowl, wash and then drain. Finely slice 10 mint leaves. Add the mint leaves to the yogurt, with a pinch of salt and pepper and a squeeze of lemon juice. Cook the chicken breasts in a large non stick pan over high heat for 3-4 mins each side until golden brown. Mix salad leaves with lemon juice and olive oil in a bowl and serve. Slice the chicken breast and place on top of salad with a spoon of yogurt. Tips: This is a very quick and easy dish; just make sure that you don't over cook the chicken, making sure it stays nice and moist in the center (white meat not pink) Do not dress your leaves too early as they will wilt very quickly.
