Machines for brewing espresso have been around since the late 19th century, but one coffee bartender in 1930s Milan felt there was something missing to this popular beverage. Due to the diminutive size of a standard glass of espresso, there had to be something extra to help the drink linger on the palate and in the memory.
Bartender Achille Gaggia filed a patent for the first steam-free coffee machine in 1938. This machine would use a piston mechanism to express water through coffee grounds at high pressure, producing a creamy top layer known today as “crema”. Gaggia’s epiphany came when he observed the engine of an American army jeep which used a hydraulic system. The epiphany that became a patent would become a reality in 1949 with the launch of The Classic, Gaggia’s first coffee machine for bars. Bars all over Milan welcomed patrons with large window signs promising Caffé crema di caffe naturale, or “Coffee cream from natural coffee.” People loved passing through for a full-bodied espresso with their nearest and dearest and, when Gaggia introduced The Gilda in 1952, they were then able to enjoy this quality coffee from the comfort of their own homes.
