Banana & Berry Muffins

Ingredients

  • 250g [9oz] 2 Cups plain flour
  • 2 tsp Ground cinnamon
  • 2 Ripe bananas, mashed
  • 150g Fresh or frozen blueberries
  • 3 tbsp Honey
  • 3 tbsp Vegetable oil
  • 1 Large egg
  • 185 ml [¾ cup] Milk
  • 2 tsp Baking powder
  • Icing sugar and strawberries for garnish
  • Directions

  • Preheat oven to 180°C. Sift the flour, baking powder, cinnamon and a pinch of salt into a large bowl.
  • Add the banana and blueberries, and using a fork, lightly toss the fruit through the flour.
  • Whisk together the honey, vegetable oil, egg and milk in a small bowl, add the liquid ingredients to the dry ingredients and lightly combine.
  • Spoon the batter into a greased 8 hole muffin tin. Bake in the oven for 20 minutes.
  • Slice the strawberries in halves and top with a sprinkling of icing sugar.
