
2 Romaine hearts (cut lengthwise in half)
50mL Caesar Salad dressing
100g crusty bread
100g shaved parmesan cheese
100g finely chopped grilled bacon
Olive oil
Salt & Pepper to taste
1.Preheat the grill to high heat for 10-15 minutes
2. Grill the bacon to the desired doneness and remove from grill and set aside to cool
3. Turn the grill to medium heat to prevent excessive burning
4. Coat the crusty bread in olive oil and salt and pepper on both sides and grill to the desired doneness, remove from the heat and cut into bite-size pieces
5. Brush romaine hearts with olive oil and a sprinkle of salt and cracked black pepper, place on the grill cut side down for 90 seconds or until a nice char appears. Remove from heat when happy with the colour
6. Chop the bacon up into small pieces
7. Plate the caesar salad by drizzling caesar dressing over the romaine hearts and top with croutons, shaved parmesan, bacon bits and salt and pepper to taste
Tip#1: You can use any form of lettuce, as long as it will hold its shape. Romain, baby cos, gem lettuce works best, whereas iceberg will not
